The risk of coconut oil, mustard oil and sunflower oil in generating hypercholesterolemia, according to the degree of saturation is a controversial matter of study for last half of the century. The levels of cholesterologenic enzyme HMG CoA reductase and various lipid components like cholesterol, triglycerides and phospholipids in liver were studied in albino rats fed 10% dietary oils for duration of 90 days. The HMG CoA Reductase activity was found to be inhibited, which corresponds to the proportionate rise in cholesterol and triglycerides with negligible rise in phospholipids. Thus results shows that though in all types of oils fatty components found increased the effect is more in coconut oil.
