Abstract

From the nutritional point of view rice is the most important cereal for the bulk of population in India. In addition to its better nutritional quality, the grain appearance, milling quality and cooking characteristics are to be considered in a breeding programme. These four criteria are discussed in detail with special reference to methodology. Two new approaches, namely histochemical characterization of seed proteins and dye binding estimation of protein quality have been suggested for the rapid screening of breeding material.
