Studies on bichemical changes associated with growth and development of pineapple fruit var. Kew revealed that changes in peel chlorophyll are closely correlated with ripening. Changes of peel carotenoid was in decreasing trend with increasing maturity, but sudden rise in peel carotenoid content was observed at ripe stage. The content of anothocyanin including chalcone decreased with maturity. The flesh carotenoid concentration increased upto 120 days of growth. At ripe stage, there was sudden rise in its concentration. The changes in flesh anthocyanin were not marked during developmental period. Specific activity of bromelin decreased with maturity and sudden decrease was observed at ripe stage.
