Abstract

Studies were carried out on changes in physical and chemical constituents during maturation of five brinjal cultivars namely, Arka Kusumakar, Arka Sheel, Arka Navaneet, West Coast Green Round and Pusa Purple Long during kharif season, 1975. The increase in fruit length was rapid upto 11 days from flowering. The yield increased with successive harvests and maximum yields were obtained by harvesting 19 days old fruits. Crude fibre, dry matter, alcohol insoluble solids and reducing sugars increased while ascorbic acid decreased with advances in fruit maturity. The study revealed that Arka Sheel reached the optimum stage of maturity for fresh market at 15th day after flowering whereas Arka Kusumakar, Arka Naveneet, West Coast Green Round and Pusa Purple Long attained the optimum harvest stage at 19 days after flowering.
