Physico-chemical characteristics of seven date palm varieties namely Halawy, Barhee, Zahidi (Local), Zahidi (USA), Khadrawy, Sharman and Medjool were studied. Raw-eating varieties like Halawy and Barhee have small fruit size, high pulp/stone ratio, small seed, medium TSS, low reducing and total sugars, high non-reducing sugars, less tannins and high sugar/tannin ratio. The trend was reverse in other culti-vars like Medjool, Shamran, Khadrawy, Zahidi (Local) and Zahidi (USA) which are good for making dry dates (Chhohard). The results may be useful for selecting date palm varieties for different purposes.
