Changes in ascorbic acid of cortical and pith regions from apical and basal portions of potato tubers previously kept in cold storage for 3 months and then stored at (T and 8±2°C were analyzed during 16 days The apical portion showed a little higher value than basal portion at 0-day but the difference was insignificant thereafter at both the temperatures. Pith region had higher amount of ascorbic acid than cortex throughout the storage period. About 84 per cent decline was recorded in this metabolite in cortex during 16 days of storage.
