Abstract

Post-harvest treatment of Papaya fruit with GA3 vitamin K, silver nitrate, kinetin and cobalt chloride were found to extend the shelf-life appreciably without any adverse affect on palatibility. The suppressed levels of succinate and malate dehydrogenase activity during the post-harvest ripening of the Papaya fruit treated with the above-said treatments indicated lower levels of mitochondrial respiratory activity denoting the retardation of ripening in the climacteric fruit of Papaya.
