Abstract

Three forms of a-glucan phosphorylase namely A,B, C, branching enzyme and Q-enzyme were isolated from mature banana fruit pulp by ammonium sulphate fractionation and DEAE-cellulose chromatography. The observations indicate that in banana pulp amylose of linear polysaccharide is synthesized by phosphorylase A or B per se while amylopectin is synthesized by phosphorylase C-Q-enzyme complex.
