Abstract

Ten mango varieties were analysed for their physico-chemical constituents. Maximum fruit weight was recorded in Fazli (506-3 g) followed by Langra (310.4 g) and Paharpur-Sinduri (293.5 g). The lowest fruit weight of 124.6 g was recorded in the Mithua variety. Fazli and Langra had higher pulp content as compared to other varieties. However, maximum pulp/stone ratio of 7.15 was recorded in Langra. Maximum ascorbic acid of 136-25 mg/100 g pulp, total soluble solids (21.79 per cent), reducing sugar (5.82 per cent) and non-reducing sugar (11.48 per cent) was recorded in the Langra.
