Abstract

The studies on the physico-chemical changes that take place during development and maturity of pear fruit cv. Patharnakh were conducted under submountaineous conditions of Punjab. The length and diameter of fruit increased gradually throughout its development, showing almost a linear pattern of growth. The growth pattern of fruit weight and volume showed slow rate during initial stages and then became linear through harvest. The data pertaining to TSS showed a gradual increase from the start of fruit development till harvest. However, the acid content of the fruit showed a reverse pattern to that of TSS.
