Changes in biochemical constituents in developing peach fruits

Abstract

In Saharanpur Prabhat and Flordasun peach, 1 May (84 ± 3 days after anthesis) and 14 May (90 ± 3 days after anthesis) could be the best time for harvesting of fruits for fresh consumption respectively. During these periods, all the biochemical parameters synchronized to give their best possible outcome for providing most satisfactory product for the consumers. In Saharanpur Prabhat, the fruits had TSS (15.45° Brix), acidity (0.24%), ascorbic acid (2.10 mg/100 ml juice), total sugars (12.67%), starch (0.0096%), chlorophyll (1.05 mg/100 g fresh weight), carotenoids (4346 μg/100 g fresh weight) at 84 days after anthesis, whereas in Flordasun, the corresponding values were 14.5° Brix, 0.54%, traces, 11.52%, 0.16%, 1.71 mg and 3452 (μg, respectively at 90 days after anthesis.
