Effect of pre-harvest application of calcium on physico-chemical changes during ripening and storage of papaya

Abstract

Pre-harvest spray of calcium compounds reduced physiological loss in weight, TSS, sugars and total carotenoid content showed an initial increase and then declined as the storage period advanced. However, high concentration of CaCl2 was most effective than all other treatments. The firmness was increased as the concentration of calcium increased in the fruits. Higher acidity was associated with longer shelf-life. The CaCl2 and Ca(NO3)2 (2%) spray affected delayed colour development and enchanced shelf-life of fruits.
