Cold Storage of Brinjals

Abstract

1. Two sizes of brinjals of the variety Eerangeri, grown on the sewage farm, Mysore, were stored at temperatures ranging from 32°F to 60°F for 28 days.

2. Big brinjals weighing 45 to 50 gm. each stored well during the entire period at 47°-50°F and 87–90% R.H. and gave a satisfactory product on cooking.

3. Small fruits 14–18 grams in weight did not store so well as big fruits, being tender and subject to low temperature injury.

4. Smaller fruits showed greater loss in weight than big fruits which was accentuated with the fall in the relative humidity.
