Production of thermostable and neutral glucoamylase by a thermophilic mould Thermomucor indicae-seudaticae in solid state fermentation

Abstract

A thermophilic mould Thermomucor indicae-seudaticae was shown to be amenable for the production of a thermostable and neutral glucoamylase in solid-state fermentation. The mould produced the enzyme optimally at 40 ºC and pH 7, when grown in wheat bran moistened with a salt solution in 1:2.5 (w/v) ratio. A very high enzyme titre (392.3±5.5 U g−1 DMB) was attained when wheat bran was supplemented with 2% cotton oil seed cake.
