Optimization of some factors affecting the production of glucoamylase by Aspergillus funiculosus

Abstract

A fungal isolate AF5 was isolated from stored rice and identified as Aspergillus funiculosus G. Smith. The isolate showed maximum glucoamylase production at 27°C and pH 5.0, in 4 days of incubation. Rice powder as carbon source and malt extract as nitrogen source were found to induce glucoamylase production by the isolate. Maximum glucoamylase activity was achieved at 45°C and pH 4.5 along with 2 % starch during enzyme-substrate reaction.
