In developing and maturing wheat grain, activities of oxidase and peroxidase enzymes are inversely related to chloroplast development. A competition for iron between development of oxidase and peroxidase enzymes and chloroplast of the grain seems to regulate the development of these iron requiring systems. The increase in the activities of these two enzymes during late stages of grain development enhances the oxidative conditions in maturing grain, thereby, oxidises the natural reducing/antioxidant present in the grain, which are essential for functioning of the starch synthetic enzyme. This would lead to an early cessation of dry matter accumulation in the grain, particularly, under high ambient temperature and late sown conditions.
