Abstract

Calcium, Sodium, Potassium, iron and phosphorus contents were analyzed at different maturity stages in banana. Total ash content of banana pulp increased gradually with the advancement in maturity. While calcium, sodium, potassium and iron in the pulp of different varieties of banana showed declining trend, phosphorus showed increasing trend with maturity. Sabri variety contained the highest amount of calcium and sodium while Amritsagar contained the highest amount of potassium and phosphorus. Iron content was highest in Anazi at all maturity stages.
