Abstract

The activities of amylase and invertase in ten varieties of mango at different maturity stages were determined. The highest amylase activity was observed in Himsagar followed by Fazli and the lowest in Aswina at the mature stage. Highest invertase activity was observed in Himsagar followed by Fazli and the lowest in Aswina at mature stage. The activities of the enzymes were found to be maximum at mature stage in all the varieties. Aswina varieties contained the lowest amount of amylase and invertase activities in all the stages.
