Biochemical changes in litchi fruits during storage were studied. Total soluble solids, reducing sugars, non-reducing sugars and total sugars increased upto 10 days of storage and thereafter declined. In contrast, titratable acidity and ascorbic acid contents followed a linear declining trend throughout the storage period of 30 days.
