Abstract

The study was made to determine the endogenous levels of different organic acids in peach with regard to growth, development and ripening of fruits. It was observed that the concentration of individual organic acids is independent of the various phases of growth as it increased significantly even during the retarded period of growth (phase II). An increase in chlo-rogenic acid was correlated with ripening and senescence of fruit.
