Abstract

Rice glutelin is the major storage protein of rice endosperm. It is composed of acidic α submit and the basic β subunit. Both of the submits arise from a 57-kDa precursor and were interlinked by disulfide bond(s). With the isoelectric focusing in the first direction and SDS-PAOE in the second, the purified α subunit produced atleast 12 peptides. However, digestion products of the glutelin subunits with TPCK-Trypsin did not correspond with the observed heterogeneities.
