Ripening changes in respect of texture, ethylene production, respiration and catalase activity were studied in Sapota cv. Kalipatti which were quite rapid at ambeient temperature of 29–31°C. Fruit firmness values showed a significant reduction from 3rd day reflecting the rapid softening of pulp. Ethylene production could be noticed from 2nd day and it reached a peak on 4th day and preceded the climacteric. There was a 3½ fold increase in its production. Changes in respiration underwent a 3 fold increase and the respiratory climacteric was attained on 5th day, Catalase activity exhibited a 6 fold increase.
