Changes in activities of pectin methyl esterate (PME) and oxidative enzymes such as catalase, peroxidase and polyphenol oxidase (PPO) were studied during ripening of sapota ‘Cv. Kalipatti’at ambient (28-30°C) temperatures and at relative humidity of 70-80%. Respiration pattern of climacteric type was exhibited during the ripening period. There were significant increases in the activities of all the enzymes except PPO. The activity of PME increased (5 fold) up to 5th day and subsequently showed a gradual decrease. Catalase and peroxidase activities showed continuous and 4-7 fold increase while PPO registered a 3 fold increase In its activity.
