Changes in amylase activity of wheat during germination

Abstract

Total amylolytic activity was studied in germinating seeds of eight diverse wheat cultivars. The results indicated that the enzyme activity was low at the initial stages thereafter increased steeply and further decreased at later stages of germination. Amongsts the cultivars, DWR-39 and Kiran showed significantly the highest and the lowest enzyme activity, respectively. Maximal enzyme activity was observed on days fourth, fifth, sixth and eighth and the minimal activity on days seventh, nineth, tenth and eleventh of germination. Further, the cultivars exhibited significant variability with respect to the levels of enzyme activity and the day(s) of germination at which the highest or lowest enzyme activity occured.
