Physico-chemical changes in developing fruits of okra

Abstract

A gradual increase in fresh and dry weight of okra fruit from fruit set to 21 days later was noted. The length and diameter of the fruits increased upto 9 and 12 days respectively and remained constant thereafter. The N, P, Fe, protein and starch content decreased gradually with the age of the fruits. The sugar content increased upto 9 days and thereafter declined.
