Solubility, isoelectric points, polyacrylamide gel electrophoresis (PAGE) and electro-metric titration curves of five different protein fractions isolated from mature berseem and alfalfa seeds have been reported. Solubility data revealed that the prolamins are least soluble at all pH values. Isoelectric point of globulin fraction was highest and that of albumin fraction lowest in each case. Globulin, albumin and prolamin fraction of berseem seed protein and globulin fraction of alfalfa seed protein were homogeneous in SDS-PAGE. Molecular weights of sub-fractions were of the order of 105. All proteins except alfalfa pseudoglobulin and alfalfa prolamin contained adequate amounts of essential amino acids such as histidine, lysine and arginine.
