Extension in shelf-life of Alphonso mangoes has been studied with reference to sucrose ester (SE) synthesised in our laboratory. The SE coating was applied to the surface of mangoes by a dip treatment and delay in ripening of mangoes was ascertained by measurements of acidity, reducing sugars and total sugars.
