During maturation of mango fruits, non-volatile organic acid components differed in the two cultivars, Fazli and Zardalu. In Fazli five organic acids viz., oxalic, citric, malic, pyruvic and succinic acids were detected whereas tartaric was an additional acid in Zardalu where comparatively all these acids were in higher concentration. Rise in pH and fall in acid concentrations were indicative of acid metabolisation which was more pronounced in Fazli. Further, kinetin application in mango cv. Zardalu resulted in drastic decline in the concentration of all acid components although it did not persist for long. On the other hand, organic acid metabolism was marginally affected by cycloheximide application which initially enhanced the acid concentrations.
