Changes in Nitrogenous Compounds During Development of White Button Mushroom

Soluble true protein content showed higher level during the early stages of growth indicating that higher levels of protein are required for the differentiation of mycelium. The non-protein nitrogenous compound content increased sharply at the open and flat stage indicating that non-protein nitrogenous compounds contribute largely to the increased crude protein content.
