Abstract

The fruit extract of mango at different maturity stages contained a number of glycosidases. Among the glycosidases studied, β-galactosidase appeared to be predominant followed by α-galactosidase, α-glucosidase and β-glucosidase. The activities of all these enzymes increased with degree of maturity and the activities of α- and β-galactosidases increased more rapidly than α- and β-glucosidases.
