Abstract

Fruit quality parameters of Rasthali banana (AAB) were studied in relation to fruit maturity. The physiological loss of weight (PLW) varied inversely with increasing maturity while acidity, TSS and starch content did not show significant differences. The fructose content of fruits increased with maturity and the differences were found to be statistically significant. These results indicate that the higher fructose content of fully ripe fruits could be an important determinant of its eating quality.
