Microbial quality of fresh chicken in retail outlets of Pondicherry

Abstract

Twenty three fresh chicken samples collected from retail outlets in and around Pondicherry were analysed for aerobic plate count, coliform count, yeast and mould count and for important meat-borne pathogens like Staphylococcus aureus, Salmonella spp., Vibrio spp. and Clostridium spp. The mean aerobic plate count, coliform count and yeast and mould count were log10 7.61, log10 5.85 and log10 7.10 cfu/g, respectively. Staphylococcus aureus was isolated from 21.74% of the samples. No Salmonella spp., Vibrio spp. and Clostridium spp. were isolated from any sample.
