Syzgium cumini is a evergreen tree which is grown widely in tropical and subtropical region. It is one of the best suitable trees for wastelands. This Jamun pulp were dried using Sun Drying, Cross flow drying, Vacuum shelf Drying and Freeze drying. These selected driers have variation in drying time and temperature. On comparing the colour of Jamun pulp powder there is significant different from Freeze dryer (light) to Cross flow dryer (dark). The bulk densities of freeze drier are higher than cross flow and vacuum drying. There is no significant difference (P≤0.05) between sun drying and cross flow drying in terms of solubility and flow property. Angle of repose was found lower in freeze dried powder and high in cross flow and sundried powder which shows excellent flow behaviour for freeze dried powder. From the X-Ray diffraction results it is found that Jamun pulp powder exhibit amorphous structure. Thus the study conclude that Freeze Dried powder of Jamun Pulp powder has a good quality, flow ability, colour and solubility on comparing the other type of driers.
