Effect of methods of castration in male kids on carcass characters and quality

Abstract

Eighteen male kids distributed equally in three treatments viz. intact group T0, castrated group by close method T1 and castrated group by open method T2, kept under Same conditions of feeding and management were slaughtered at the age of eleven months. The preslaughter weight, weight at slaughter, body length, hot carcass weight dressed carcass weight, dressing percentage, weight of shoulder cut, rack cut, loin cut and hind quarter cut were significantly higher in T1 and T2 than T0. However mean bone percentage was more in T0 than in T1 and T2. The meat percentage on dressed carcass weight was significantly higher in T1 and T2 over T0. The protein percentage was higher in T0 than and T2 but ether extract was lower. The values for ash and soluble constitutents did not show any difference. The organoleptic tests showed significantly higher scores for flavour, aroma, tenderness, juiciness and overall palatability for the meat of T1 and T2 over T0. This indicated good effect of castration on weight and quality of meat in kids.
