Abstract

A slaughter study was undertaken on 12 weeks old White Giant (WG) rabbits maintained at the sub-temperate climate at Kodai hills to assess their relative carcass characteristics. The pre-slaughter weight, hot carcass weight, reference carcass weight were 1891.66, 1132.03, 827.98 g., respectively and dressing percentage was 56.81. The yield of different offals was 53.37, 12.00, 6.65, 158.42, 194.92 and 66.00g for liver, kidney, heart, head, skin and blood, respectively. The proximate composition of Longissimus dorsi muscle of WG rabbits was 76.15, 1.26, 22.57 and 4.19% for moisture, total ash, protein and ether extract, respectively.
