Abstract

The present review aimsto highlight the current statusof goat milk production and processing and approaches for thier improvement in the country. About a quarter of total livestock is constituted of goats, considered as tool for the food security, economic upliftment and employment among small and marginal farmers. There is no dairy goat breed in India, while a good number of goat breeds are dual purpose (meat and milk). Goat milk has many certain therapeutic values in human nutrition and medicine due to its low allergicity, better digestiblity, anti-inflammatory, anti-microbial and anticancerous properties. Goat milk processing and product preparation are almost negligible in the country. Some of the goat milk products like paneer, khoa, shrikhand, cheese etc. can be prepared. There is aneed to promote goat milk productionand provide infrastructure and financial support tothe farmers and entrepreneurs in processing and value addition of goat milk. The improvement of goat milk in India may serve two purposes(i)milk from goat will provide regularsource of income and better nutrition to farmers(ii) milk products from dairy goat will meetthe demand of urban people.
