Plethora of fresh fruits and vegetables are available in market during seasonal period but other times, it is scarce. Most of fruits and vegetables are only edible for short time. These need to be utilised properly in terms of preservation. Women play a significant role in preserving fruits and vegetables. Due to the fact of this, about 80 per cent of handling of work is done by women and mostly they have been preserving in traditional way. The objective of the study was to find out the impact of the study in terms of knowledge gain after training and also to know about the constraints faced in adoption of enterprise. It was found that before getting training, majority (70.0%) respondents had low level of knowledge about preservation of fruits and vegetables followed by medium (29.16%). Whereas, trainees (55%) had gained high knowledge whereas less than 50 per cent trainees had medium level knowledge after getting training. Trainees gained more knowledge about use of preservatives (95.0%) and commercial name of preservatives (94.0%).
