Abstract

The characteristics and constants of freshly extracted wheat germ oil were as follows:-Specific gravity 0.9233: refractive index at 25°C 1.4760: saponification value 190.0: peroxide value 39.1 (meq of peroxide/kg of oils and free fatty acid 13.8%. Storage studies of wheat germ oil in polypropylene (PP) and high density polyethylene (HOPE) bottles showed a gradual increase in free fatty acid content and fluctuations in peroxide value throughout the storage period of one year.
