Moisture determination is one of the most important and widely used measurement in the processing and testing of milk and milk products. Although several methods are available for the determination of moisture namely Drying methods, Physical methods, Distination methods and chemical methods but they have one or more limitations in terms of cost, time suitability for various products and the facilities required in terms of apparutus and accuracy. This review deals with the advantages and shortcomings of each methods so as to facilitate selection of the most dependable and practicable method for moisture determination in dairy products.
