Abstract

Low fat spread was prepared by following standardized method, was packed into presterilised polystyrene cups and stored at 5°C. The shelf life of product was determined in terms of acceptability of product, acidity and free fatty acid content of product during storage. The product remained good up to 13th day and fair quality up to 15th day of storage.
