Both ass's and camel's milk are less familiar than cow and buffalo milk in India. However, ass's milk is used in some parts of India as a local medicine for curing certain diseases. Camel milk is used as food in many parts of Gujarat and Rajasthan. In all 20 samples of ass's milk and 20 samples of camel's milk were processed for various chemical analysis. A wide variation in the quality of raw ass's milk and camel's milk were observed. The percentage of total solids, fat, total protein, lactose and ash ranged between 6.00–10.60 and 9.07–14.30; 1.00–2.00 and 3.15–5.00; 1.20–1.87 and 2.80–4.85; 3.20–7.24 and 2.25–5.00; 0.53–0.95 and 0.60–1.00 respectively for ass's and camel’ milk. However, all the other parameters triglycerides, fat, total protein, ash contents of camel’ milk were significantly (P<O.Ol) higher than that of ass's milk.
