Efficacy of turmeric powder as antimicrobial preservative in quality and storage stability of bronze featherback (Notopterus notopterus) fishcake

Abstract

Turmeric has a range of pharmacological activities. The objective of this study was to focus on the efficacy of turmeric powder as antimicrobial preservative in quality and storage stability of bronze featherback (Notopterus notopterus) fishcake. Different turmeric concentrations (0.5, 1.0, 1.5, 2.0 and 2.5%) were applied to these fishcakes. Texture firmness (N), TBARS (mg MDA/kg), total plate count (cfu/g) and organoleptic attributes were examined during 15 days of chilled store at 8°C. Results showed that 1.5% of turmeric powder was adequate for bronze featherback (Notopterus notopterus) fishcake preservation in 12 days.
