Pepper elder is well-known for its variety of biological activities and therapeutic capabilities. It is normally utilized as a medicinal plant owing to its phytochemical substances with potential pharmacological attributes. This research successfully investigated some major technical parameters affecting the lactic acid fermentation (pickling) of pepper elder. The pickled pepper elder would be a safe and healthy food for human use.
