Modification of Chromobacterium viscosum lipase by stearic acid

Abstract

Chromobacterium viscosum lipase was modified by stearic acid in two-phase system for improved trans-esterification (TE) activity. The stearic acid, dissolved in n-hexane, was mixed with lipase in buffer phase for 24 h. The modified lipase was present as insoluble layer at the interface, showed 9 units trans-esterification activity. The FTIR spectrum of lipase showed a new sharp peak corresponding to 1700 cm−1 as a result of stearic acid modification. The modified lipase catalyzed trans-esterification is useful in preparing structured lipid, with capric rich oleic triglyceride as a model system.
