Abstract

Thirty five male subjects in the age group of 45–60 years who were suffering from one of the risk factor for heart problems - hypercholesterolemia, hypertension, obesity were selected. Background information, food and nutrient intake of the subjects were collected through an interview schedule. Then supplemented wheat flour with defatted soy flour (70: 30) was provided to the subjects for a period of 3 months. Also awareness especially about the importance of healthy heart diet and benefits of soybeans was created among the subjects. Supplementation led to significant increase in the intake of protein content and significant decrease in the intake of energy, carbohydrate and total fat. A significant reduction in systolic and diastolic blood pressure, total cholesterol (215.48 to 194.6 mg/dl), LDL -C (134.79 to 115.65 mg/dl), VLDL-C (38.37 to 34.17 mg/dl), total triglycerides (191. 88 to 170. 88 mg/dl) was observed among the hypercholesterolemic subjects after the supplementation period. Thus, regular consumption of defatted soy flour coupled with healthy heart diet had a significant effect on blood and lipid profile of the subjects.
