Abstract

An evaluation was made of rheological behavior of three type of Punjab honey viz cotton, barseem and multifloral. The experimental data were collected using CVO100 Rheometer with 9 rotational speeds varying from 20 to 100 s−1 at temperatures of 25, 30, 35, 40 and 45°C. The experimental data were fitted using the rheological behavior empirical models of Power-law and Herschel-Bulkley. Both models represented a good adjustment to the experimental data. All the samples represented pseudoplastic behavior with value of consistency coefficient 19.06–158.39 Pa sn and flow behavior index 0.72–0.82. The effect of temperature on rheological parameters was determined using Arrhenius model. The maximum value of activation energy was found to be 127.03 KJ/mol with corresponding Arrhenius constant of 3.941 E-15 Pa sn for barseem honey.
