Minor fruits occupy a prominent place in certain areas of country. They are well known for their therapeutic, medicinal and nutritional value. Lesora (Cordia dichotoma), a minor fruit is a good source of fbre, carbohydrates and gums. Attempts were made to assess the quality parameters of lesora at two different stages of maturity i.e. immature and mature. Results of the study revealed that the protein, fat, fbre, total sugars and total soluble solids increased with increase in maturity whereas the acidity and ascorbic acid contents remained same in both the stages of maturity. Similarly, the gum content increased signifcantly with maturity. Commercialization of such minor fruits is needed to exploit their nutritional and food uses.
