Some nutritional attributes of blackgram and grasspea genotypes

Abstract

Soluble protein fractions, trypsin inhibitors and ODAP were monitored in four genotypes of blackgram and grasspea. In both blackgram and grasspea albumin and globulin were the major protein fractions, globulin being the highest. On an average glutelin fraction was 2 to 3 times higher in grasspea whereas albumin and prolamine were considerably higher in blackgram. Trypsin inhibitors were found higher in grasspea genotypes and ODAP ranged from 0.15 to 0.36%. Both T9 and B76 blackgram genotypes may appear nutritionally superior because of their high albumin and reduced trypsin inhibitor activity. P28 genotype of grasspea may perform better due to presence of relatively higher albumin and low ODAP content.
