With a view to improve the nutrition of faba bean, influence of germination time and type of illumination onphytic acid and polyphenols of faba bean was investigated. Germination time up to 72 h significantly reduced (P < 0.05) the phytic acid content from 8.36 mg g−1 to 5.27 mg g−1 while beyond that time it increased significantly (P < 0.05) reaching the maximum value of 7.54 mg g−1 after 120 h under yellow light. Methanol extractable polyphenols decreased significantly (P < 0.05) with 24 h and 48 h germination time while after that it increased significantly (P < 0.05). Acidic methanol extractable phenols significantly increased (P < 0.05) from 0.058% to 0.162% within the first 24 h germination while beyond that it decreased significantly. Water extractable polyphenols decreased significantly with the increase in germination time.
