Development of tannin containing nutraceutical additive from Babul (Acacia nilotica) and its acceptability in food products for management of Diabetes

Nutraceuticals are naturally derived bioactive compounds that have health promoting, disease preventing or medicinal properties. Hence, foods can be developed to be specific to individual human genotypes, can benefit health and can enhance normal physiological processes. Thus the study focused on the development of Tannin containing nutraceutical additive from babul and its acceptability in food products. Babul pods powder was processed for the development of nutraceutical and subjected for quality evaluation. The nutraceutical was added in different recipes to assess the acceptability in food products and was highly acceptable among panel members. Thus the Babul can be regarded as strong contender for nutraceutical development.
